PINEAPPLE FRIED RICE

Can’t skip a rice recipe that turned out to be amazing ! Pineapple in your kitchen is not just a fruit used to make sweet dishes or fruit yogurt or drinks it brings verity of uses like for example many people like pineapple in pizza. This recipe is inspired from Thai pineapple fried rice. It’s a fussion of Thai and Chinese fried rice recipes resulting in indo-chinese flavor. This recipe is complete in itself with very limited vegetable and sauce.

I am very much fond of rice. In this recipe the pineapple I used was very sweet so the rice turned out to be sweet, spicy and tangy all in one without loosing their own property. This can be achieved only if the rice is cold, you can choose your own way to cool the rice like keep the cooked rice in a plate and refrigerate for 2 hr or until cool completely or give ice water bath to rice, make sure to drain all excess water. Hot rice or fresh cooked rise tends to absorb more moisture when cooked further while frying, resulting over cooking of rice and also hampering all the individual flavors.

PINEAPPLE FRIED RICE

INGREDIENTS:

  • 2 cup cooked rice
  • 1/2 cup chopped pineapple
  • 2 tbs chopped onion
  • 2 tbs chopped yellow bell pepper
  • 1 tbs chopped tomato
  • 1 tbs chopped spring onion(green)
  • 1 tsp chopped garlic
  • 1 tsp chopped red chili
  • 1 tbs oil
  • a pinch cumin powder
  • 1/4 tsp coriander powder
  • 1 tbs chili garlic sauce
  • salt
  • 1 tbs lemon juice
  • black pepper

METHOD:

  • Keep the rice in fridge at list for 2 hours.
  • Heat a wok and add oil
  • keep flame medium to high throughout the cooking
  • add chili and garlic – saute for 1 min
  • add onions – saute for 1 min
  • add bell pepper- saute for 1 min
  • add pineapple and let it brown slightly for a grilled flavor
  • add tomatoes, spices and sauce .
  • cook for 2 min then add rice – mix
  • cover and cook fro 5 min
  • add lemon juice mix well
  • serve hot and enjoy it 🌢🌢hot !!
