This will be the first recipe on my blog, why not start with a sweet menu. Could not think of anything better than one of my favorite – almond cake, its quick easy and with easily available ingredients in our kitchen.
Me and my husband were on keto diet for months, just to enjoy the a different food menu, which also helped is weight loss. I really enjoyed experimenting and learning keto food recipes.Protein rich food are very much welcome in most of diet plans and Almonds are good source of protein, vitamins, minerals and fiber – full of health benefits.
Adding eggs to this recipe not just helps in binding & rising the cake but also increases the protein content in this recipe. Reading the word Egg brings a very obvious question ‘can we replace egg in this recipe ?’ So I will not Jumble it more but there is lot more to know about cooking and baking on my blog, very soon I will be adding data on replacing eggs in any recipes, because I do go vegetarian during festive and worship period.

Almond Cake Recipe:
INGREDIENTS:
- 3/4 cup Almond Flour (fine grounded Almonds)
- 1/4 cup Sweetener
- 1 tbs Vanilla extract
- 2 tbs Milk (or 1 tbs cream + 1 Tbs water)
- 1 tbs oil( any refined oil)
- 2 tbs Sliced Almonds
- 2 Large Eggs
Method:
- Pre heat oven to 180 ºC.
- Wisk 2 egg yolks, oil and sweetener till creamy and light.
- Add Almond flour, vanilla extract and milk to the mix.
- Combine everything well and keep aside.
- Take a bowl add 2 egg whites and beat till soft peak.
- Gently fold egg whites to the cake mix (adding egg whites in 2 batches is really a good idea).
- Grease the pan with oil, pore the cake mix in the pan and top with chopped almonds
- And put it in the oven.
- Now bake the cake mix for 20 to 25 min.
- Allow the cake to cool and the gently demold.
- Do share with your family and friends.
